Breakfast
- Sliced beets / green beans / peas / carrots
- Scrambled eggs
- Apple sauce pouch / apple slices / banana
- Butter bread / grits / cereal and milk
- Swap for grain/fruit: oatmeal with berries
Lunch / snack
- Rotisserie chicken / cheese stick / cream spinach with bacon / half sandwich, sliced turkey, mayo, creole mustard / chicken, tortilla, shredded cheese, ranch, lettuce / potato salad with eggs, brown mustard, mayo, fresh celery, dill pickle relish, top with chicken
- (Rotisserie just makes it easier prep for me, but you can precook batches of breast or thighs)
- Fruit different than breakfast
- Steamed cauliflower/ sweet potatoes / cole slaw / above combo foods
Dinner (swaps for variety)
- Spaghetti: 1 pound pasta, 1 jar spaghetti sauce, mix in: sprinkle of Italian seasoning, 1 can carrots, 1 can spinach, (optional: 1 can corn), meatballs for portioning
- “Other” spaghetti: spaghetti noodles, steamed cauliflower, rotisserie chicken, top with pesto / olive oil + garlic salt
- Mac n cheese (any version, home made, boxed, any brand), pair but do not mix in: corn / carrots / green beans / peas / beets / broccoli / cauliflower, breakfast sausage / chicken / meatballs / chicken nuggets
- Red beans and rice: 1 pound beans, ???rice, 1 pound of andouille (optional but tasty, but cheaper to skip), riced cauliflower (I use kitchen scissors to “chop” anything for kids), 2 tbs liquid smoke (a must have, if you skip a turkey neck / ham hock because of choking concerns for kids, which I do)
- I use a rice cooker (this is the closest new model; ours is older) to make all my rice, and I never know how much to cook, so I just guess and make more when I need it. If I have leftover then I make another batch of beans.
- Chickpeas / garbonzo beans: 1 pound beans, soak 8 hours in water, dump, pressure cook, put on top of rice, top with way too much olive oil and Cavendar’s Greek Seasoning, optional: sesame oil, maybe not optional, I can’t remember
- Chicken nuggets / fish sticks, tator tots / fries, apple chunks / slices, corn! Done and done. Cooks in the air fryer perfectly and fast.
